Mexican food simply does not exist in the mid Atlantic states. Oh, there may be Mexican restaurants, but the food is not. After several failed attempts to find our favorite fare in Richmond and several really bad burritos, tacos, enchiladas and tostadas (why do they put cinnamon in those things anyway??) we will be eating Mexican food from our own 1/4 Mexican kitchen.
I made these yummy quesadillas this week, threw on some black beans, leftover pico and it looked so great I just had to take a picture and post...

The black beans freaked me out...I originaly thought it was in conjunction with the bugs below it "here's how bad the mexican is here" sort of thing. heheheh :)
